Why do Google reviews disappear?
A previously visible review can disappear after a change by its author, Google's moderation or a change affecting the profile's content. First establish what is missing and where it was visible. A lower count or an absent review does not, by itself, identify the cause or prove that it was fake.
This question starts with a review you could previously see. If you only have a customer's message saying they submitted one, public visibility has not yet been established. Keep dates attached to what you actually observed. “Last seen on Monday; absent when checked on Thursday” is more accurate than saying it was deleted on Tuesday without evidence.

Choose one missing review rather than trying to explain the whole count at once. Establish the correct branch, earlier visibility and what you can see now. Separate facts you observed from explanations you are considering.
Then check for a relevant profile event or notice. Record a merge, reinstatement or restriction only if it is actually confirmed. If the evidence does not distinguish author deletion from moderation, say that it remains uncertain. A customer's recollection or a single screenshot should not be made to carry more than it shows.
